Sweet Mustard and Greens Grilled Cheese

An indulgent combination of sweet mustard, garlic, broccoli rabe, and provolone, this grilled cheese might just become your new favorite. Be sure you don’t skimp on the balsamic at the end—it adds wonderful flavor to this fantastic sandwich!

  • 1 Tbsp. olive oil
  • 1 cup coarsly chopped brocoli rabe
  • 1 clove garlic, minced
  • 2 Tbsp. butter
  • 1½ Tbsp. Liss Ellas sweet and hot mustard
  • 2 slices sourdough bread
  • 2 oz. provolone cheese, grated
  • 1 Tbsp. balsamic vinegar, for serving


1. In a skillet over moderate-high heat, heat the oil. Add the broccoli rabe and garlic, season with salt, and cook until wilted, about 4 minutes. Set aside.

2. In the same skillet over moderate-high heat, add 1 tablespoon butter. Spread the mustard onto one side of each slice of bread, then transfer to the skillet mustard-side up. Top one of the slices with provolone and the cooked broccoli rabe, then, using a spatula, cover the topping with the other slice of bread, mustard-side down.

3. Cook, pressing the sandwich into the skillet with a spatula, until the bread is golden brown and the cheese starts to melt, about 5 minutes. Flip and cook the other side until golden brown, about 4 minutes more. To serve, transfer to a plate, cut in half across the diagonal, and drizzle with balsamic vinegar.
