Sherry Flip

While brainstorming with Cervantes Ramirez of New York City bar The Ship, Powell created a series of cocktails using the Spanish fortified wine Sherry. This one incorporates an egg yolk to create what’s known in bar speak as a flip.

  • 2 oz. cream sherry
  • 1 Tbsp. heavy cream
  • 1 egg yolk
  • 1 tsp. jam
  • 1 tsp. honey
  • 3 ice cubes
  • Dash of orange bitters (optional)


In a cocktail shaker, combine the sherry, heavy cream, egg yolk, jam, and honey. Shake vigorously for 30 seconds. Add the ice cubes and shake 30 seconds more. Strain into a chilled coupe and garnish with the bitters.
