Herbed Pâte Brisé: Savory French Pie Crust

Makes: 1 pie crust | Time: 15 minutes

Pâte Brisée, one of the traditional French pie crusts, is easy to make and so much tastier than its store-bought counterpart. This one features Un Brin Sauvage’s persillade herb blend, making it a fantastic base for savory pies and tarts. Plus, the dough keeps well in the freezer, so feel free to double the recipe to have one ready to use another day.

  • 1¼ cup flour
  • 1 Tbsp. Un Brin Sauvage persillade herb blend [shopify embed_type=”product” shop=”try-the-world.myshopify.com” product_handle=”persillade-herb-blend” show=”button-only”]
  • 1 tsp. pepper
  • ½ tsp. salt [shopify embed_type=”product” shop=”try-the-world.myshopify.com” product_handle=”fine-grain-pink-salt” show=”button-only”]
  • 1 stick butter, cut into 1-inch cubes
  • 5 Tbsp. ice water


1. In a food processor, combine the flour, herb blend, pepper, sugar, and salt. Add the butter and pulse until the mixture resembles coarse sand. Gradually add the ice water and pulse until the dough comes together. Add more cold water if necessary.

2. Gather the dough into a ball, cover with plastic wrap, and flatten into a disk. Chill in the refrigerator for a minimum of 1 hour before using.
